The enamel surface released my burnt-on lasagna corners with just a soak, which never happened with my old aluminum pan. Five centimeters of depth is plenty for a proper deep-dish without overflowing.

The 28cm rim means my chicken and leek pie actually fits with room to spare, and the black enamel looks smart enough to take straight to the table. Crimping the pastry edge against that 5cm depth was easier than my old tin, and it cleaned up with a quick soak.
